This is a bit technical, but if you are interested, please take a look...!
Here is the global warming environmental impact of our most popular product, Impossible Chocolate Chip.

Benchmark (main condition): 60g per cookie produced and consumed in Tokyo using the average butter, eggs, sugar, flour, chocolate chips, etc. consumed in Japan.
Our product (main condition): 60g per cookie produced and consumed in Tokyo using domestic rice oil, organic oats milk, beet sugar, brown sugar, domestic flour free of pesticides and chemical fertilizers, organic chocolate chips, etc.
GHG: LCIA indicators affecting global warming indicators calculated based on the LIME2 model; secondary databases are IDEAv3.1, ecoinvent v3.10, etc.
Measurement tool: My EcoMonometer Month of measurement: March 2024
Animal-based ingredients have a large environmental impact in the process of transporting and raising food, while cookies made with plant-based ingredients have a significant environmental impact reduction.

In addition, the use of organic and pesticide-free ingredients further reduces environmental impact!

It may sound complicated, but just by eating cookies, you are doing something good for the environment!

Weighing Cookie Loss

When making cookies, there are inevitably some that are made but cannot be eaten by everyone.

It's sad for us as the producers too, so we measure the waste every day and think about how we can reduce it as much as possible.

Measuring the ingredients also helps raise awareness among the members who make cookies every day!

Refugee Support

The members were sad to have to endure the loss, but at the same time, they wanted to share the deliciousness of these cookies, which are edible despite their awkward shape, with the hope that they could bring happiness to someone else.
We are donating to the Certified NPO Refugee Support Association, which is located in the same building as ovgo Baker Cookie Factory.

The main items we donate are as follows:

・Stickers have been pasted incorrectly. ・Items that are misshapen. ・Items that are close to their expiration date. ・Items that are chipped.

Day Old Box

Regarding the products sold individually at the ovgo Baker Edo St. store every day, we aim to deliver freshly made products to customers as much as possible, while also planning our production to minimize waste.

As for the waste that still remains, although they are not freshly baked, they are still delicious to eat, so we sell several sets at a more affordable price.

There are days when it is not available,
You are lucky to have met him!

Materials used

Wrapping paper, cups, and other items are essential when providing customers with freshly baked cookies and drinks.

Although I always wish I could use more of these kinds of ingredients, I consider the balance when deciding which ingredients to use so that customers can enjoy plant-based baked goods as easily as possible.

Drink cup

The bagasse paper is a non-wood based material, and the inner laminate is made of PLA (a biodegradable plastic derived from plants).

Bagasse is the residue, such as stems and leaves, that remains after the sugar juice is squeezed out of sugarcane, and is a by-product produced in large quantities in sugar production.

Since most of it is disposed of as waste, using bagasse as a raw material for paper not only reduces waste but also limits the use of wood, which is the raw material for paper, and leads to forest conservation. In addition, sugarcane has an extremely high photosynthetic ability and absorbs a lot of carbon dioxide from the air, which is said to be a factor in global warming, so it is said to be an effective crop for global environmental measures.

Clear Cup

We use environmentally friendly PET cups made from recycled PET bottles collected from the domestic market, which contain more than 25% recycled plastic.

Paper napkins

We use a unique technology to incorporate silver skin, which is produced when coffee beans are roasted, into the paper, resulting in environmentally friendly napkin paper that uses less fresh pulp.

Silverskin is the thin layer of skin removed from coffee beans during the roasting process.

It doesn't smell like coffee at all! Lol

straw

The straws used are made from a resin called polylactic acid (PLA).

"Polylactic acid" is a type of biodegradable plastic derived from plants. It is made by extracting starch from corn, sugar cane, potatoes, etc., fermenting it, and then polymerizing the lactic acid obtained to create a polymer.

It is completely decomposed by bacteria and returns to the soil, and even when incinerated, it does not produce any harmful gases or residues.

Cup Sleeve

The cup sleeves are made from "Colorful Wish®," recycled paper made from folded cranes that have been donated to the Hiroshima Peace Memorial Park, the Nagasaki Atomic Bomb Museum, and the Himeyuri Peace Memorial Museum in Okinawa.

Apparently, 10 million folded paper cranes are delivered to Hiroshima Peace Memorial Park every year.

The weight of each crane is approximately 10 tons. The weight of the paper goes beyond what it would appear to be, and the thought put into each crane is enormous.

Since it is produced in limited quantities, it is not something that is used all the time, but those who have come across it are lucky!
